A highly fragrant and hardy evergreen herb, lemon thyme is traditionally used as a flavouring and marinade.

Lemon Thyme (Thymus citriodorus)

With many flavoured thymes being cross cultivated, lemon thyme is particularly popular in England, traditionally used to flavour desserts and marinade fruits and vegetables. It has a distinct, earthy lemon flavour when crushed.

With minimal maintenance, its resilience to the weather makes wild lemon thyme common in Mediterranean countries and is often found in teas and syrups, while the oil is popular in aromatherapy.

Along with garlic, add to the inside of a chicken before roasting for a wonderfully fragrant roast dinner.
